Party Pumpkin Pie
Ingredients
- 1/2 cup gingersnap crumbs
- 1/2 cup graham cracker crumbs
- 2 Tbsp margarine, melted
- Nonstick cooking spray
- 1 egg
- 2 egg whites
- 1 16-oz can pumpkin
- 1/4 cup sugar
- 2 Tbsp molasses (blackstrap or mild)
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 12 oz evaporated skim milk
Directions
Preheat the oven to 350 ° F. Mix the gingersnap and graham cracker crumbs together with the margarine. Lightly coat a nonstick 10-inch pie pan with nonstick cooking spray. Press the crumb mixture into the bottom of the pie pan and bake for 7 minutes. Let the crust cool on a wire rack. Leave the oven on. Whisk together the remaining ingredients until well blended. Pour the mixture into the partially baked pie crust. Bake for 40 - 50 minutes, or until the center of the pie does not jiggle when you put on an oven mitt and gently shake the pan.
